Structurally, collagen includes 18 types, such as Type I, II, III, IV, V, VI, etc., with Types I-IV being predominant. It consists of two α1(Ⅰ) chains and one α2 chain intertwined to form a unique triple-helical structure, i.e., [α1(Ⅰ)]?α2.

Under the action of acid, alkali, enzymes, or high temperature, it gradually decomposes and eventually hydrolyzes into eighteen α-amino acids, mainly glycine and alanine (accounting for 44%). Structurally, collagen includes 18 types, such as Type I, II, III, IV, V, VI, etc., with Types I-IV being predominant.
